Mac and Cheese
Ingredients
- 3 cups elbow pasta
- 4 tbsp butter
- 4 tbsp flour
- 1-1/2 cups half and half
- 4 cups (1 lb) shredded cheddar cheese
- 2 tbsp shredded parmesan cheese
- 1/4 cup breadcrumbs
- 1/2 tsp salt
- 3/4 tsp pepper
Instructions
- Preheat oven to 350°F
- Begin cooking pasta

Make a roux in separate large pot
- Melt butter over medium-high heat
- Slowly add flour, whisking to keep smooth
- Set heat to low when bubbling begins, continue whisking for 2-5 minutes
- Slowly add half and half, whisking to keep smooth
- Add 3-1/2 cups of the cheddar and all parmesan cheese, stir thoroughly

Combine ingredients, stir thoroughly
- Al dente pasta
- Fully melted cheese sauce
- Salt and pepper
- Pour into glass baking dish, smooth top
- Sprinkle remaining 1/2 cup cheddar cheese on top
- Sprinkle breadcrumbs on top
- Bake uncovered until cheese on top has melted and breadcrumbs are lightly browned, about 20 minutes
