Chocolate Chip Muffins
Ingredients
- Dry Ingredients
- 2 cups unbleached all-purpose flour
- 1/2 cup granulated sugar
- 1/2 tsp salt
- 1 tbsp baking powder
- 1/2 cup semi-sweet chocolate chips
- Wet Ingredients
- 1 cup whole milk
- 1/4 cup olive/vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup semi-sweet chocolate chips
- 1 tbsp granulated sugar
Instructions
- Preheat oven to 425°F
- Prepare muffin pan with wrappers (or use a silicone muffin pan, preferred)
- In a large bowl, whisk together all dry ingredients (except the chocolate chips and sugar listed separately)
- In a medium bowl, whisk together all wet ingredients
- Pour wet ingredients into dry ingredients
- Whisk mixture for about 20-30 seconds. Some lumps are okay
- Pour mixture into muffin pan cups, fill roughly 3/4 full
- Take remaining chocolate chips and sprinkle on top of muffins
- Take remaining sugar and sprinkle on top of muffins
- Bake 20-25 minutes, or until tops are lightly golden brown
