Breakfast Potatoes

Breakfast potatoes in a skillet

Ingredients

Instructions

  1. Dice the onion into 1/4 inch pieces
  2. Begin sauteing the onions with 1 tbsp of oil over medium heat in a large pan, stir occasionally
  3. Dice the potatoes into 1/2 inch cubes
  4. Fill a large pot with cold water, then add the potatoes
  5. Bring the potatoes to a boil over high heat
  6. Remove potatoes and strain 4-5 minutes after pot begins boiling
  7. Add potatoes to onions, mix thoroughly
  8. Mix all seasoning in a bowl, sprinkle over potato and onion mixture, then mix thoroughly
  9. Increase pan to high heat
  10. Add remaining 3 tbsp of oil as necessary while continuing to cook
  11. Cook for approximately 45-60 minutes or until crispy, stirring occasionally
  12. Top potatoes with parsley and serve
