Breakfast Potatoes
Ingredients
- 3 medium russet potatoes (~1.25 lb)
- 4 tbsp olive oil
- 1 yellow onion
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp rosemary
- 1 tsp parsley
Instructions
- Dice the onion into 1/4 inch pieces
- Begin sauteing the onions with 1 tbsp of oil over medium heat in a large pan, stir occasionally
- Dice the potatoes into 1/2 inch cubes
- Fill a large pot with cold water, then add the potatoes
- Bring the potatoes to a boil over high heat
- Remove potatoes and strain 4-5 minutes after pot begins boiling
- Add potatoes to onions, mix thoroughly
- Mix all seasoning in a bowl, sprinkle over potato and onion mixture, then mix thoroughly
- Increase pan to high heat
- Add remaining 3 tbsp of oil as necessary while continuing to cook
- Cook for approximately 45-60 minutes or until crispy, stirring occasionally
- Top potatoes with parsley and serve
